What Does Buffalo Taste Like?

I'm a borderline vegetarian. It’s not a moral thing; I just don't like the taste or texture of most meat. I had an even bigger issue with trying this kind of meat; even though at some restaurants in Southern Utah it basically dominates the menu. I just kept thinking that I was eating a disappearing symbol of the great American West and it just felt so odd to me. I finally had a buffalo burger; and I liked it...at first. It wasn't necessarily better than hamburger. However, after a few hours I really started disliking it. It seems to coat the mouth with some weird grease that you can't get off even when you brush your teeth three times. I think this is one of those animals that are just better to look at.
