Most of my favorite vegan recipes involve copy cat ideas of food that you would usually eat but with a vegetable base. I've been doing this for several years. It just dawned on me yesterday that I do it not only because it's healthier but it's also creative and I like the taste. Sure using spaghetti squash instead of pasta takes some getting used to. Making a cookie dough dip out of white beans is also pretty far out there. I even liked it when I used portobello mushroom caps instead of pizza crust. I just need to get over the idea that somehow it tastes “better" to have a white flour base. It sure is cheaper though.
