I can for some reason only eat burgers from restaurants or from a grill. This means I don't eat a lot of red meat at home. However, one day I had a bunch of mushrooms that needed to be eaten, but I wasn't in the mood to taste a mushroom but I can't find the exact recipe again for the mushroom burger I made. I substituted some of the ingredients for bbq sauce so it would still have a smokey flavor. Surprisingly these froze well and tasted pretty good on the George Foreman grill. (I don't know if it's ok to freeze raw mushrooms that will have to be a random fact for another day so check on that before you freeze them).
I think if you try an mushroom or veggie burger expecting it to taste exactly like beef you'll be disappointed. However, if you just want a good meal it can be a fun and cost effective addition. Most recipes use portabella mushrooms but I opted for button ones because that was what I had. By the time I topped my burger with blue cheese, bacon (again I'm not vegetarian just grossed out by most meat), and avocado I really didn't miss beef.
